This spent a little less than a year in barrel with only 3% being new barrels while 86% were neutral so there is minimal oak influence in this wine allowing the pure nature of this dark Ribbon Ridge bottling to really come out

Made using the traditional method used in Champagne

allowing the lime to shine while the bright acidity makes for a mouthwatering finish that keeps you coming back for more

What can we say

Protos - Verdejo 2022 011025 Absolutely delightfulBright yellow straw color, with green hints that reflect its youth. Aromas of tropical fruits (pineapple) and citrus fruits first appear along with white fruits (apple) and herbs, such as boxwood and fennel. Dry with an amazing balance of freshness and acidity. Good structure and body given by its fine lees aging. Long finish with a slightly bitter palate, typical of the variety. Pair with white fish, tuna, sushi, seafood rice, paella, and pasta.
